Sour Cream Made out of cream, contains from 18 to 20 percent butterfats (about 14 grams per 4 ounce serving), and gets its characteristic tang from the lactic acid created by the bacteria.
Crème fraiche is particularly useful in finishing sauces in French cooking because it does not curdle. Crème fraiche is a substitute for sour cream.
